Research Abstract |
We researched the character of soybean proteases which degrade three major allergens (α-subunit of β-conglycinin, Gly m Bd 30K, Gly m Bd 28K) as soybean germinates and grows. The results suggest that α-subunit of β-conglycinin is degraded by protease which is synthesized after germination. In addition, it is likely that Gly m Bd 30K and Gly m Bd 28K are degraded by some kind of aspartic protease stored in dry seed, which are activated or altered of localization after germination.
