| Research Abstract |
緑茶は、生活習慣病の予防に効果を発揮することが期待されているが、機能性の発現機構は解明されておらず、化学的根拠は得られていない。最近、多くの蛋白質が生体内・外に存在する低分子化合物と相互作用し、生体機能を調節することが明らかとなった。本研究では、緑茶の主要な機能性成分であるカテキン類と結合し生体機能調節に関与する蛋白質を探索する為の方法論を確立し、血清あるいは細胞内で結合する複数の蛋白質を見出した。
