| Research Abstract |
本研究は、農産物の表面に付着している微生物が形成するバイオフィルムについて、それらの形成防止・除去法の確立を最終目的として、基礎的な特徴把握を試みたものである。検討の結果、微生物の種や属の多寡により、形成パターンが変動すること、また、変動する温度環境下でバイオフィルムを形成させた場合、一定温度で形成した場合より付着レベルが高まることが明らかとなった。青果物の流通では、周辺環境が非定常状態となるが、このような条件は微生物的な品質も大きく低下させる危険性が高まることが示された。
