Outline of Final Research Achievements |
This study involved a collaboration between foreign language teachers (English) and specialized teachers (Culinary Science and Nutrition) to develop a "CLIL for Nutrition Education in English" as a three-year program from 2019. In 2020, we conducted a "Survey on Nutrition Education for International Students in Fukuoka Prefecture" and received responses from 24 of 35 higher education institutions in the prefecture (68.6% response rate). The responses revealed that 1) there is a large number of long-term international students, 2) many are from within Asia, and 3) many schools do not provide meals or opportunities for nutrition education to international students. In 2021, based on the questionnaire survey, a "Food and Culture" seminar was conducted for Japanese and international students at the School of Interdisciplinary Science and Innovation, Kyushu University, under the theme of "Multicultural Conviviality of Food," and the pre-survey and post-survey reports were analyzed.

Academic Significance and Societal Importance of the Research Achievements |
コロナ禍の中、「孤食」に陥りがちな外国人留学生、日本人留学生の食生活に関する調査をした。また、調理学、栄養学、語学の観点から、「食と文化」のオンラインセミナーが実施できた。学校給食の恩恵がなく、一人暮らしの多い大学生にとっては、「食生活」は心と身体の健康を維持する上で非常に重要である。このCLILの食育英語プロジェクトの特色は、「語学教員」と「専門教員(栄養・調理)」が協業していることにある。学生が家庭科や食育で学んできたContentについて、英語の語彙表現、文法を参照しながら、「食と文化」のオンラインセミナーの実施において留学生と日本人学生がディスカッションする場を取り入れることができた。
