Outline of Final Research Achievements |
We developed the "Write-In Guide for Preparing Emergency Food Service Manuals for Nursing Homes" and "Action Cards for Meal Service Drills," which clearly indicate the actions to be taken in each situation. A questionnaire to evaluate them was sent to registered dietitians or dietitians in nursing homes in Kumamoto Prefecture, which had experienced damage from earthquakes and floods. The Guide as a whole and the flowcharts and indications of measures for each situation in the Action Cards were highly evaluated for readability and usability. On the other hand, the survey also revealed that it was difficult for them to stock food for staff and to increase in volume the supplied stockpiles due to lack of space and budget, and it took time to prepare and introduce the manual because it required discussions with the facilities and contractors.

Academic Significance and Societal Importance of the Research Achievements |
給食BCP(事業継続計画)は,地域継続の観点からも非常に重要な機能を担い,サービスを止めないよう継続させ,もし止まっても,目標とする時間内にいち早く正常な状態に復旧させるために必要なものである。その備えのためにも,本研究の成果物である書籍「福祉施設・病院等における給食BCP導入の手引き」を参考に給食BCP の作成に取り組んでもらうことで,1日3食提供できなくなることや食事内容の乏しさによる病状の悪化や災害関連死を防止することにつながる。
