Outline of Final Research Achievements |
Existing sociological/anthropological theories of global culture focus on the de-embedding of cultures that are detached from their original context and report the localization and hybridization of cross-border cultures. Contemporary culture, on the other hand, emphasizes national and local valorization in the name of tradition and authenticity. These are neither mere universalization nor its reaction, but more complex cultural phenomena. This complex de/re-embedding process will be analyzed through a cross-sectional survey of Japanese restaurants abroad. I conducted a detailed descriptive analysis of the process of multiethnicization of Japanese food based on participant observation of local restaurants, interviews with managers and customers, and document/visual analysis, and examined the conditions for establishing a cultural constancy that is open to multiple cultures and connected to the roots, thereby updating social theories of global culture.

Academic Significance and Societal Importance of the Research Achievements |
多文化化する社会でどのように多民族に開かれた日本食が具体化されるかを明らかにする本研究は、“We are What We Eat.”という理念を実証的に問うことで、「日本人の、日本人による、日本人のための」食として語られてしまう文化ナショナリズムを相対化する社会的意義がある。日本食の概念が特定のイメージ、ステレオタイプと結びついており、「日本食」の実践がそれを強化/変容している食文化の中に、エスニシティ・レイシズムの課題があることが分かる。このように食をめぐる日常の諸実践の中から、グローバル文化をめぐる問題系についての議論基盤を提供する点で、本研究には人文社会科学を発展させる学術的意義をもつ。
