| Research Abstract |
(1)レジスタントスターチ・タイプ4(RS-4)の栄養・生理機能について検討し、食物繊維としての位置付けおよび役割を明らかにする。
(2)RS-4の物理的および化学的特性と栄養・生理機能の関係について明らかにする。
上記の2項日を達成することにより、新規機能性食品の開発を目指す。
