Outline of Annual Research Achievements |
After hundreds of experiments, the fingerprint THz spectra of hesperidin and naringin (family members of flavonoids) were innovatively identified and for the first time, the gaps in the THz database for those have been filled. The extracts from waste orange peels were novelty detected by terahertz spectroscopy, which simplified the complex and time-consuming conventional analysis like HPLC to some large extent. The results have been published in peer-reviewed journals with a high impact factor (IF): Food Control (Q1 journal; IF: 5.548). Because of the interesting results, I have been invited as the keynote speaker for an international conference: 11th Advanced Lasers and Photon Sources (ALPS2022), PACIFICO Yokohama, Japan; I International Workshop on Hyperspectral Imaging -Unicamp Workshop; and a co-author for The IEEE Summer Topicals Meeting Series, Cabo San Lucas, Mexico.
As an invited editor, Nova publication "The Book of Flavonoids" has been published online and I also CONTRIBUTED one chapter besides editing work, the total words are 86,584.
In FY 2021, 7 SCI papers have been accepted for publication in high-impact factor journals, and 2 conference papers were achieved. Besides being the guest associate editor for Journal Frontiers in Plant Science (IF: 5.753), I was also invited as Special Issue Editor for Sustainability (IF: 3.251). Due to my positive research activity, I was invited to contribute to a Viewpoint article in Nature Reviews Physics (IF: 31.068, it is a series of Nature). I am also invited as a reviewer for several mainstream journals with high IF.

2: Research has progressed on the whole more than it was originally planned.
Reason
Most of the work plans (WP) have been completed as scheduled. The application of THz spectroscopy to casings has been accepted in Food Control (IF: 5.548). WP 3: Prediction of microbial growth in the sausage stuffed in modified casing (FY2021-2022) has been successfully achieved and the paper has been published in Foods (IF: 4.350). The extraction of waste orange peels has been optimized by response surface methodology and this research work has been published in Molecules (IF: 4.412) as well. As aforementioned last year: it is necessary to confirm the fingerprint of flavonoids (such as hesperidin and naringin) in the terahertz range, this study has been published in Food Control (IF: 5.548). Due to the positive academic activity, I have been invited to the editor of two peer-reviewed journals, and for a book. As the co-author, the article "Recent advances of near-infrared applications in fruits and byproducts" has been accepted in Frontiers in Plant Science (IF: 5.753) and broadened the future research topic and cooperation. I was invited to contribute to a Viewpoint article in Nature Reviews Physics (IF: 31.068, it is a series of Nature). I am also invited as a reviewer for several mainstream journals with high IF. Since conducting this research project, 11 SCI papers have been published, 1 book chapter as well as 1 book published, 4 oral presentations have been invited for the international and domestic conferences.
As the application of terahertz spectroscopy (THz) to food science is brandy new, a lot of innovative ideas merit attention and put into practice.

Strategy for Future Research Activity |
Up to now, the project is going smoothly and fruitful outcomes have been obtained far more than expected (as stated in the proposal "Significance of the proposed research: At least 4 international peer-reviewed scientific journal publications will be achieved") although I have confronted lots of challenges. Apart from completing the WP as scheduled, some new ideas have been stimulated. If this technology can be combined with other technologies such as hyperspectral imaging, the outcomes are far more than expected.
In the following year, I will complete the WP of characterization of the quality of sausage stuffed in the modified casing added with flavonoids, which includes the texture, color (the colorimeter has been purchased and will be extensively used for the following analysis), and so on. The best adding amount of orange extracts into the modified casing will be optimized by response surface methodology and establish its relationship between quality attributes. The fingerprint of neohesperidin (another important flavonoid member) and the mixture of hesperidin, naringin, neohesperidin will be identified in the THz range, the business travel fee may increase to have the experimental cooperation.
The application of THz to the food field is still at the early stage and there are a lot of good unique ideas that merit being tried, as this is the last year for supporting this research work, I will do my best to seek the research grant and sincerely hope it will be continuously supported by JSPS for my deeper investigation and achieve more fruitful outcomes.

Causes of Carryover |
Due to the serious situation caused by Coronavirus, the experiments confronted difficulties. It also takes some time to familiar with a new working environment and systems. Those result in the left grant from the previous fiscal year.
