Outline of Annual Research Achievements |
The textural profile attributes (hardness, springiness, gumminess, etc.) and pH of the sausage stuffed in a modified casing added with flavonoids extracted from waste orange peel were analyzed. In this study, the best addition amount of orange extracts into the modified casing has been confirmed. The relationship between quality attributes and addition amount has been established. This work has been accepted for publication in a peer-reviewed journal named Foods [impact factor (IF): 5.561). The primary component of the orange extracts has also been identified by HPLC as scheduled in the work plan, the main component is consistent with the results from terahertz spectroscopy. This study has also been published in a peer-reviewed journal named Applied Sciences (IF: 2.838). In FY2022, 5 papers were published. Besides, 4 conference oral posters have been published. The outcome attracted lots of researchers and enterprises who would like to cooperate in the near future. During the whole research conduction, a total of 16 SCI papers, 1 book chapter and 1 book have been published. 8 oral presentations have been invited for international and domestic conferences. I am also invited as a peer-viewer for several high-impact factor journals and to the Guest Associate Editor for Journal Frontiers in Plant Science (IF: 6.627), Foods (IF: 5.561), Frontiers in Nutrition (IF: 6.590), Sustainability (IF: 3.889), and the Editor for the Nova publication “The Book of Flavonoids”.
