Article 1: With help from research assistants, I have managed to construct a dataset of over 2,000 non-meat hamburgers. Most of FY2023 was spent on the creation of another dataset that summarizes key financial data from companies that offer non-meat hamburgers. Once my co-author and I have combined both datasets, we will test hypotheses linking food innovation to financial resources and outcomes and write an article to be submitted to an academic journal. Depending on our results, I might write a second paper on the international diffusion of food innovations, comparing not only countries and regions but also local, regional and global fast food chains. Article 2: My co-authors and I have started to draft two papers, one conceptual and the other empirical. Out of the approximately 80 restaurants we have identified that offer insects on their menus, we have so far interviewed 13. As we continue to negotiate access, we are widening data collection to other actors in the entomophagy space. We presented a manuscript with early findings at the Academy of Management (AOM) Organization and Management Theory Division Paper Development Workshop on "Doing Organizational Research Around the World", 8 December 2023, Singapore. While both articles are taking longer than planned, the resource-intensive stages that required research assistance, Factiva database access, international travel for research presentations, etc. are now over. What remains are the penning and submission of manuscripts, all of which can be done without the need for further funding.
