This aim of this research was to explore the consumption of consumer behavior toward olive oil using the experimental auction approach. During the experiment, 2 rounds of auctions were conducted in which the willingness to pay for a 100 ml bottle of olive oil was collected. the participants were first presented with general information about olive oil during the first round of the experimental auction and then information about the health benefits of olive oil during the second round of the auction. The objectif was to assess how the information about the health benfits of olive oil would affect the willingness to pay of the participants. The results have showed that the health benefits' information had a positive effect on the willingness to pay.
