Research Abstract |
We determined the effect of the food contaminants 3-MCPD and glycidol on immune responses. Our results indicated 3-MCPD and its derivative glycidol at or above concentration of 0.3% may potentially affect immune responses. Although the food contaminants at low concentrations in foods in usual might not affect human health, accidental contamination of the compounds at high concentration might affect immune responses upon its intake.
