Outline of Final Research Achievements

We conducted the human clinical studies to evaluate postprandial inflammatory responses after fat or glucose intake in healthy subjects. The inflammatory responses and the attenuation of endothelium-dependent vasodilation were observed in postprandial state, which were partly improved by co-intake of fruit derived polyphenol. In cultured cell models, we confirmed the anti-inflammatory effects of polyphenols under the stimulation of fatty acid, glucose or LPS. These results suggest that polyphenols may contribute to improve postprandial inflammatory responses leading to atherosclerosis.
