Research Abstract |
For overseas expansion of food service industry, it generally tends to focus on business interest whether menu or taste should be fitted into a food culture of host market. However, it was clarified in this study that a success or failure for the overseas expansion would depend on whether an efficient operation system could properly be structured for the country. Operation system here means three sub-systems as "Food material procurement system", "Store development system", and "Human resources development system". It would be extremely difficult to structure them by each individual company separately, but since the various Japanese firms that support to structure these sub-systems in recent years, their overseas expansion can comparatively be easier even for small/medium sized food service firm. Therefore, it was clarified that this movement could be an important factor to facilitate a globalization in food service industry.
