| Outline of Annual Research Achievements |
パルスパワー技術の近年の進展により、環境、医療・福祉、農漁業等、幅広くパルスパワー応用が展開している。農業に関しては、植物成長促進や砂糖大根や葡萄からのジュース抽出増量等にパルスパワーが使われ、一部製品化している。本研究では、パルスパワーを印加することにより、果物、野菜、肉が柔らかくなることを明らかにするとともに、そのメカニズム解明を行う。また、パルスパワーのパルス幅、電界強度、印加回数を変えて、レオメーターで測定することにより、かたさの定量的計測を行う。これら研究成果は、例えば、嚥下困難により飲む込む力が低下したり、堅いものをかめなくなった高齢者への新しい非加熱（低温）調理器の提供につながり、福祉や食品提供の質の向上につながる。
平成27年度は、ジャガイモにパルスパワーを印加して、軟化することを、レオメータで測定するとともに、液体クロマトグラフィーを用いて、精度よく食品に含まれるビタミンCをパルスパワー印加の有無で調べ、測定誤差の範囲で変化がないことを明らかにした。人参の遺伝子へのパルスパワーの影響は観測できなかった。
