| Outline of Annual Research Achievements |
世界規模での食のグローバル化により、日本での輸入食品が増えている現状において、それに対する安全性確保の整備は立ち遅れている。このような現状の今日、輸入食品による健康被害の報告は後を絶たず、消費者の大きな関心事となっている。したがって、広く一般消費者に対して、食品の安全性を確保するためのシステム作りは急務の課題と考える。ここでは、輸入魚介類を含む魚介類がもたらす細菌性食中毒のリスクに着目し、それによる健康被害を未然に防ぐ対策へと繋げる事を目的としている。
これまでに、日本の魚介類の生産量や輸入状況などの実態調査を実施した。それらの調査結果から、東南アジア各国での魚介類の生産及び流通に着目し、それら地域でのフィールドワークを実施して、魚介類の生産、流通、消費について、食品衛生及び食中毒の観点から研究を展開した。
また、それらの発展途上国において実用化可能で、食品の食中毒菌汚染を迅速・簡便・高感度に検出するための方法であるマルチプレックスPCR法を開発し、食品の食中毒菌汚染を調べるシステムの構築を行った。本年度は、魚介類を汚染する食中毒菌の腸炎ビブリオについて、その菌種を標的とし、かつ、本菌の病原性遺伝子を標的としたマルチプレックスPCR法について、昨年度構築したシステムの問題点の改善に取組んだ。結果として、これまで実施されていた方法を改良して、サイクル数と反応液の濃度を調整することで、より高感度に結果を得ることが可能となった。そしてその方法を用いて、東南アジア各国において、実際の魚介類を使用して食中毒菌汚染の検査を行ったところ、これまでに使用していたシステムよりも、簡便性及び迅速性を考えた場合に、より適した方法として採用できる可能性があることが分かった。
