Outline of Final Research Achievements

5-Lipoxygenase is an enzyme that catalyzes formation of leukotrienes. Leukotrienes are implicated in inflammatory processes and allergic reaction such as asthma. We evaluated the inhibitory effect of various foods on 5-lipoxygenase activity. We found that nutmeg contained a potent inhibitor of 5-lipoxygenase. We identified an inhibitor of 5-lipoxygenase in nutmeg and established an efficient extraction protocol.
