Outline of Final Research Achievements |
Cyanidin is one of flavonoid pigments distributed in a wide range of plants. Because of its effective bioactivities (e.g. antioxidant activity, inhibition of malignant cell growth et al.), Cyanidin has been recognized as a valuable compound in light of health promotion. In nature, Cyanidin is existing as glycosides and these glycan parts are confirmed their effects on molecular stability and enhancement of bioactivity. In this project, we chemically/enzymatically synthesized novel Cyanidin glycosides modified with non-native sugars (Lactose, 3-fluoro Glucose and Sialylated Lactose) onto 3-OH position. These synthesized Cyanidin glycosides were examined their antioxidant activity by ORAC assay. As a result, we found that modification with non-native type sugars on Cyanidin gave better antioxidant activity compared to natural type Cyanidin and its glycosides.
