Research Abstract

個人の咀嚼能力に対応できる新規の食品加工技術として、衝撃波による食品加工技術研究を実施した。水中衝撃波による細胞破壊のメカニズムを解明し、衝撃波負荷に対する食品の軟化評価、衝撃波パラメータの計測ならびに評価、衝撃波伝播解析のための数値計算用コード開発、顕微鏡観察による衝撃波痕跡の画像解析を行い、個々人の咀嚼能力に応じた固さを得る食品加工技術の実用化のためのメカニズムを解明した
