Research Abstract

ワケギの独特な肉質や食感、風味などは葉ネギには無い優れた形質である。それらの形質を葉ネギに導入することが出来れば新しい品種の育成が可能になる。本研究により、ワケギ独特の食感形成に係わる成分はプロトペクチンおよび水溶性ペクチンであり、それらの代謝関連遺伝子(ペクチンメチルエステラーゼ、ポリガラクツロナーゼ)の染色体上での所在が明らかとなるなど、ワケギ独特の食感を有するネギの育成に利用可能な知見が得られた。
