Research Abstract

1.健常若年者で試験食品の物性や量・味をかえて嚥下機能を官能評価と筋電図で評価した。その結果、試験食品の動揺変性の性質は官能評価と同様に口腔咽頭の嚥下の筋電図にも影響していることが示唆された。(Dysphagia in press)
2.嚥下しやすい食品の要因を評価するため即溶性低強度寒天をもちいて研究をおこない、その結果若年健常者では1.1%が好ましい濃度であり、味は甘味、量は5gであった。一方高齢者では甘味のみが嚥下しやすい項目と評価した。(J.Home Eco.Jpn.Vol.60, No2. 133-138, 2009)
3.中高年女性の唾液分泌不足の代表的自己免疫疾患であるシェーグレン症候群の患者唾液の酵素からこの疾患に関与しているmatrix metalloproteinase-9を検出・分離・同定し、なおかつ健常者と比較して多く存在することが示唆された。このaffinity chromatographyを有効に利用することによりこの疾患での今後の診断・治療になんらかの貢献ができるものと考えられる。(Clinica Chimica Acta 403 269-271, 2009)
