Ethanol-fermenting fungi Mucor javanicus J has strong ethanol fermentation ability from pentose under aerobic condition. To clarify this phenomenon and the pentose metabolic pathway, the metabolism flow from xylose to ethanol was ascertained by the metabolome analysis by CE-TOFMS.
