Research Abstract |
Palatinose is a modestly-sweet functional saccharide without decaying property. We have studied the quality and taste of baked sweets affected by ratios of palatinose to sugar. Palatinose cookies did not spread so much but rather swelled substantially. They also indicated relatively high hardness in the fracture tests and orgnoleptic evaluations. Furthermore,they led to significantly longer chewing duration,iteration,and higher muscle activity,which makes them promising for the teething application.
