Outline of Research at the Start

本研究は、サハラ以南アフリカの三か国、つまりエチオピアとガーナ、南アフリカの都市や農村における食と料理の変容を明らかにするとともに、人びとの食習慣に国民食が浸透する様相を解明する。そのために、三か国それぞれの都市部と農村部でフィールドワークを実施し、人びとがどのような料理を「国民食」として認識しているのか、いかなる歴史的過程を経て特定の食が「国民食」とみなされるようになってきたのかを検討する。
