| 研究成果の概要 |
本研究は、質的研究手法により、東京と上海の地域食文化を研究し、公開研究ウェブサイトを創出することを目的としています。コロナ禍のため、上海のプロジェクトは中途打ち切りとなりましたが、上海の中心部にある一つの地域（大沽路）に関する調査は終了しました。東京の研究においては、一つの地域（西荻窪）で調査を行い、バイリンガルのウェブページを通じてその結果を共有しています。調査を基に、持続可能な地域のガストロノミーの概念を構築しました。そして、都市の地域における料理文化を持続させるための重要な四つの要素を特定しました：人間的スケールの建築環境、個人経営の店、職人技術の伝統、および移民の起業精神です。

| 研究成果の学術的意義や社会的意義 |
The project has scientific significance in developing the concept of sustainable neighborhood foodways, extending the idea of social sustainability to the study of urban gastronomy.
Socially the project made results available to the public in a bilingual English-Japanese website nishiogiology.org.
