研究概要

麹菌(Aspergillus oryzae)は日本酒、醤油、味噌などの醸造に使用されている重要な微生物であり、大量に酵素などのタンパク質を分泌生産する能力を持つ。最近、解読された全ゲノム情報を利用してタンパク質の分泌経路に関して、分子生物学的及び細胞生物学的手法により解析を行った。これにより得られた成果に基づいて遺伝子破壊や突然変異株の単離などの手法により有用タンパク質を多量に生産する麹菌の育種に成功した。
