研究成果の概要

食品副産物を多用した発酵TMRは、乳酸優勢の発酵特性を示しながら開封後に変敗しにくいという特徴をもつ。これに関わる乳酸菌とその作用機序を明らかにし、新しいサイレージ添加剤の開発につながる知見を得ることを目的とした。自給飼料利用型発酵TMRの実規模製品を収集して細菌フローラの実態調査を行い、Lactobacillus pontis、Lactobacillus fructivorans等を候補菌として提示した。Liver Infusion Sake培地でL. fructivoransの分離にも成功し、小規模サイロの添加実験で変敗抑制効果を確認した。
