研究概要	食品成分の味、においの感覚への影響を神経系の応答を指標として検査する方法を確立し、この方法を用いて嗅覚の応答における慣れの現象と化学構造の関係を明らかにした。また昆布の成分中にラットの摂食行動を促進する物質を見出し、その精製を行って構造を解析した。次に食品成分の糖代謝への影響を、インスリン分泌、作用、血中インスリン様成長因子(IGF)を指標として検討した。まず食品中のビタミンD欠乏はインスリンの生合成が低下すること、ビタミンDの投与はこれを改善することを明らかにした。また高脂肪食は、血糖とインスリン分泌を増加させ、インスリン作用を障害すること、インスリン受容体は軽度に減少し、受容体のリン酸化能も低下すること、しかし糖輸送体担体には影響しないことを明らかにした。かつこのようなインスリン作用への脂肪の影響は、脂肪酸の種類によって異る可能性が示唆された。次に食品蛋白質は単にIGFの量を変化させるのみでなく、IGFの作用に密接に関係のあるIGF結合蛋白の血中の量にも影響することをウェスタンブロット法で明らかにした。更に本態性高血圧モデルラットの血圧は食品蛋白の影響を受けることをすでに見出しているが、その成分について研究を行った。その結果含硫脂肪酸には降圧、脳卒中防止効果があるが蛋白の作用はこれのみでは説明できないことが明らかとなった。そこで有効成分の抽出を試み、降圧、脳卒中防止効果のあるオリゴペプチドの分離に成功した。目下このオリゴペプチドのより詳細な作用について検討中である。
