研究概要	多田班員は、消化管がBおよびT細胞の分化の場として重要であること、ことに胸腺にしか存在しないはずの未分化のCD4^+CD8^+T細胞が消化管に存在することを証明した。白井班員は、自己免疫動物の発症過程で、低脂肪低カロリ-食が自己抗体産生を抑制し、発病率を低下させることを証明した。これはアレルギ-にも応用可能であった。上野川班員は、食品抗原ds_<1ー>カゼイン分子内で、TおよびB細胞を刺激し得るエピト-プの分布を解明した。それぞれのエピト-プの立体的位置関係が、食品アレルギ-成立に関与していることがわかった。また免疫抑制因子を産生するT細胞クロ-ンを得た。村上班員は、食品中に含まれるインタ-フェロン誘導物質を追跡し、比較的単純な多糖類等に顕著な活性を認めた。それらが消化管を通して吸収され、生体防御に関与していることを示した。高久班員は、食品アレルギ-で問題になる好酸球の誘導に働く造血因子としてILー5とGMーCSFの共同作業が存在することを証明した。鈴木班員は、食肉の熟成に関与しているCa^<2+>結合性プロテインキナ-ゼCの基本構造を決定した。さらにカルパインが細胞活性化において転写因子制御していることを証明した。栃倉班員は、ビフィズス菌生着因子、ビフィズス菌由来の酵素の生体防御におよぼす影響を調べた。吉田班員は、解毒に関与するチトクロ-ムP450の生成課程でのRNA転写の生体内条件、ことにアスコルビン酸について解析した。
