研究概要

1.平成4年10月16-17日の2日間、倉敷市の山陽ハイツで「食物の摂取機構の総合的研究」の班会議を開催した。研究代表者・分担者及び共同研究者の総計49名が参加して2年度の10月までに得られた研究成果及び次年度の展望を発表し討論した。
2.味覚情報のトランスダクション及び味質識別機構は、佐藤、山本、笠原の班員が研究している。塩刺激の変換には味受容膜に存在するカチオンチャネル、K^+チャネル、CL^-チャネルが関与する。甘味受容には大錘体神経の役割が大きいこと、味覚嫌悪学習には扁桃体が最も重要な役育を果す。
3.食物の示す口腔内体性感覚情報及び歯・舌ざわりの認知機序は山本、笠原、林、刈田、天野、鈴木、豊島、植村が研究している。味蕾の基底細胞はMerkel細胞由来であること、歯髄神経の一部は中脳路核に投射していること、歯髄情報は視索上核に投射すること、口腔体性感覚情報は結合腕周囲核の中間レベルに投射することが明らかになった。
4.咀嚼リズム形成と口腔内体性感覚の関係は、中村、角野、山田、島田の班員が研究している。咀嚼時には閉口時間を一定に保つ機構が存在すること、口腔内の機械的刺激で舌筋活動が反射的に調節されることが明らかになった。
5.咀嚼運動の調整・唾液分泌機構と体性感覚入力は、中村、角野、猪股、村上の班員が研究している。皮質咀嚼野にはたえず食物の感覚情報が投射されていること、唾液核ニューロンは口腔感覚情報で種々制御されていることが明らかになった。
