研究概要	食糧確保の問題は人類にとって地球規模で急ぎ解決しなくてはならない最重要課題である。特に優良な蛋白質を供給する食資源動物の効率的な増産は、植物と比較して改良に時間を要するのでより難しい課題である。一方で様々な化学物質による食糧汚染が人類と動物の生存を脅かす要因となってきているが、人類はいつの時代にもその時代の先端技術を取り入れて食糧増産を実現してきた。食糧危機と食糧汚染を克服するために廃棄されている未利用セルロース資源を飼料化し、多産な小型草食獣に与えて食糧を効率よく生産する体系を確立すべく本研究を進めている。すなわち大型家畜に専用飼料を給与して食肉を生産するのとは逆に小規模な余剰物利用型食肉生産系で環境を破壊せずに人と食を競合しないエコシステムを開発し、食糧として安全性に注目して新たに飼料化したものが食糧汚染の原因となって人を汚染しないことを調べることで畜産物の安全性を保証する技術を確立しようとしている。本年度は主に家畜の体内に取り込まれた環境汚染物質を生体核磁気共鳴装置(NMR)を用いて非破壊的にリアルタイムに検出解析できる手法を開発した。実験動物や小型草食動物を用いて環境汚染物質の解毒を一手に引き受ける肝におけるin vivoおよびin vitro両系で環境汚染物質をNMRにて検出・解析する観測条件を決定した。続いてこの観測データをイメージングワークステーションにて3次元立体画像として構築できるプログラムを完成させることができた。この3次元イメージング型NMRを用いる方法を利用すると、経口的に摂取される天然物を含む各種の催奇形性物質に起因する胎児奇形を妊娠早期から画像データとして容易に検出できることを実証できた。このことは当初予定していた以上の成果で、発生生物学全般にも貢献すると考える。
