新規ラジカル消去系による抗疾病食品素材の開発とその生体系での機能検証・応用

研究概要	Y(触媒種=抗酸化性物質)が、X(活性酸素種)とZ(受容種)の共存下で微弱光を示すという発見に基づいて、YあるいはZとして作用する食品素材成分・生体成分の検索、さらにはそれらが生体内で示す酸化防御機能について検討した。また、XYZ系の病態診断への利用の可能性について合わせて検討を行い、次ぎのようなことが明かになった。 1.Zそのものはプロオキシダントであるが、Yとの共存で協奏的に強い抗酸化能を示すようになること、また、フォトンはY,Zの特徴に依存して400〜800nmに特徴的な発光を示すことが明かになった。生体成分としてのリポキシゲナーゼ、シトクロム、SODなどはZとしての性質を示すが、Yの存在下では抗酸化作用を示すことが明かになった。 2.YあるいはZ成分としてのビオカニンA、あるいはビオカニンAを含む大豆、味噌はいずれもラット乳癌の発生数と、一匹当たりの平均腫瘍数を低下させた。また、その効果はビオカニンAで最も強く、次いで味噌、大豆の順であった。 3.動脈硬化性疾患者の低密度リポタンパク質をYとしてXYZ系の微弱発光を測定したところ、動脈硬化性疾患者では発光量の減少がみられ、ラジカル消去活性が低下していることが明かになった。喫煙者においても低密度リポタンパク質の過酸化と発光量の減少が観察された。 4.Y成分としてのカテキン類をパラコート酸化ストレス負荷ラットに給与し、それらの酸化防御機能について比較検討を行ったところ、XYZ系でYとして強い微弱光を示すカテキン類ほど高い生体酸化防御機能を示すことが明かになった。
