レーザードップラー法を用いた果実の熟度・品質測定システムの作成

研究概要	本年度は次の3点の研究を行った。 (1)硬度計で測定しリンゴの硬度と,レーザードップラー法(LDV)による弾性率との相関をとる。 (2)ラフランスのメルティングを、官能試験ではなく,物理的測定法に基づいて数値化する。 (3)レーザードップラーの周波数スペクトルのデータを,第2共鳴周波数だけでなく,全ての情報を用いて果実の肉質を判定する。 (1)については、リンゴ品種,夏緑,祝、つがる、スターキング、フジについて行った。その結果フジを除いた品種ではLDVから求めた弾性率との間に,0.9に近い相関が認められたが,フジはO.7程度であった。LDVのデータを主成分分析にかけ,重回帰の相関値が上がるかを検討したが,0.75以上には上がらなかった。(2)ラフランスを収穫後,1℃で貯蔵した場合,3ヶ月まではその後室温に戻した場合メルティングが起こるが,それ以上貯蔵するとメルティングが起こらないことがわかった。また、LDVから求めた弾性率と粘性率は、メルティングが起こるときには急激な変化をしないことがわかった。(3)については,ナシのメルティング質がLDVのスペクトルのどこかに反映されていないかどうかを探った。しかし,まずナシのメルティングを数値化する必要が生じたため、破壊法によるメルティング測定装置を開発した〔特許出願中〕。このデータとLDVの主成分分析のデータを付き合わせたところ,ほぼ100%LDVのデータでメルティングの程度を評価することができた。今後は,サンプル数を増やし,人の感じる食感をLDVの値で非破壊非接触で測定することを目標とする。
