研究実績の概要 |
The research project focused on culinary neighborhoods in Shanghai and Tokyo. Migrants are shown to have contributed to a cosmopolitan and diverse scene in both cities, and small human scale eateries provide places for sociability and consumption. However urban renewal in Shanghai is shown to be eliminating much of the infrastructure for human scale culinary neighborhoods, resulting in scenes in which corporate scale eateries and drinking places dominate. In Tokyo, the small scale of eateries in some districts has been better preserved. The role of small eateries as third spaces between work and home is still evident in Tokyo. Migrants make a greater contribution to foodscapes than before. Women are also more important as consumers than in the past.

理由
The fieldwork in Shanghai and Tokyo has largely been completed. A final research trip to Shanghai in March was not possible because of the COVID virus. The Tokyo fieldwork has progressed well. The large volume of data has meant that writing up has gone slower than expected. Moreover, the COVID epidemic has so drastically effected urban foodways, that it is also necessary to consider the impact of COVID in future publications.

今後の研究の推進方策 |
The product is still producing publications and will continue to do so for the next year. Follow-up research is planned and will deal with the impact of COVID on urban foodscapes. Some of this research will be conducted by online interviewing. We are looking apply for funds to study the impact on COVID on independent restaurant businesses in different cities.

次年度使用額が生じた理由 |
Because of the rise of COVID in China, the travel plans for last year had to be altered. This money will be used this year to finish the project using online methods and China-based research collaborators as well as research in Tokyo.
