The main objective all over our research is to achieve more information about the roles of water molecular network,in different systems,with special interest in leaving cells such as Lactobacillus bacteria(Lb) and its effect on the human body through the lens of NIR light using Aquaphotomics approach. The knowledge accumulated in the field of bacteria analyses in the last 2 years allowed us to continue studying functionality of Lb strains grown in media made with mineral waters having different spectral patterns and when adding different stress factors such as low pH, bile salt tolerance or presence of pathogen bacteria. Detailed evaluation of in vivo spectral data of 25 different Lb strains performed at different spectral ranges showed consistency with previous findings that there is a specific water spectral pattern for each growing stage and each organism called aquagram. By analysing the aquagrams of each strain obtained during the cultivation time(11.4-12h) we could discriminate resistant and non-resistant Lb strains and predict their low pH and bile resistances. The extended spectral DB allowed us to identify the most beneficial Lb strains for probiotic foods which were used to prepare new products with high probiotic characteristics. Preliminary experiments were performed to study the effect of this products on human body with NIR spectroscopy and Aquaphotomics. The results acquired during this project can also further extend the range of possible applications of Aquaphotomics and open a new venue to approach water in biology from different perspectives.
