Research Abstract

In the last 15 years a series of mutagenic heterocyclic amines have been found in cooked meat an fish. A number of these compounds have been shown to be multisite rodent carcinogens. Among them, PhIP (2-amino-1-methyl-6-phenyl-imidazo[4,5-b]pyridine), A alpha C(2-amino-9H-pyrido[2,3-b]indole) and MeA alpha C (2-amino-3-methyl-9H-pyrido[2,3-b]indole) are considered to be important mutagenic-carcinogenic heterocyclic amines because of their high content in various cooked foods. This project is focused on the distribution and formation mechanism of these carcinogens in the environment such as air. We have clearly demonstrated the followings :
(1)A alpha C and MeA alpha C are present measured in airborne particles, rain water soil and cigarette-smoke-polluted indoor air.
(2)PhIP has been measured in airborne particles, diesel-exhaust particles, and incineration ash from garbage-burning plants. PhIP was found in all kinds of samples.
(3)These findings described above suggest that carcinogenic heterocyclic amines are formed through combustion of various materials such as food, grass and petroleum.
(4)Either sugar or aldehyde is an important reactant i PhIP formation.
(5)Pentose in nucleic acids may participate in PhIP forming reactions.
