Research Abstract

我々の実施している循環器疾患予防国際共同研究で、心筋梗塞は動物性脂肪の摂取と正相関し魚介類や大豆の摂取と逆相関することを明らかにしている。オーストラリア先住民、イタリア移民の循環器疾患危険因子の保有率を検討、危険改善のための介入研究を計画し、共同研究者によるフィールド設定調査を実施した。同様に心臓病死の多いスコットランド更年期女性を対象にしたランダムナイズド、ダブルブラインドの大豆食介入研究により大豆蛋白、イソフラボン5週間摂取による血圧の低下及び血清脂質の改善を報告した(J.Am.Coll.Nutr.2004)。この血圧低下の一因として生体内一酸化窒素動態の改善作用を動物実験により証明した。またイソフラボンのうちゲネステインには血管系におけるフリーラジカル発生に関与するNADPHオキシダーゼの産生抑制及びフリーラジカル産生抑制作用のあることを証明した。またお茶に含まれるフィトケミカルであるポリフェノールにも同様な作用があることを証明し(Hypertens.Res.,2003)動物実験での血圧上昇抑制作用を報告した(J.Nutri,2004)。またアフリカタンザニアにおける生活習慣病及びその危険因子の増加を報告し(East Afr.Med.J.2003,S.Afr.Med.J.2003)、その素因とフィトケミカル等の食事成分の影響についての予備調査を都市部ダルエスサラームにて実施した。
