Research Abstract |
Most Japanese citizens have grown up eating school lunches, since it was available almost everywhere in Japan. School lunches have enormous influence in forming eating habits. There are recent movements in school lunch supply centers to use local or at least national products. Since September 2001, when the first dairy cow was found infected with BSE (Bovine Spongiform Encephalopathy), beef consumption has declined in school lunches. Research and surveys focusing on beef in school lunches were conducted with the following findings : 1)Approximately 60% of school lunch supply centers in Japan have ceased using beef and beef products after the first detection of BSE. 2)Some supply centers, in Japanese Black Cattle area (Iwate Maesawa region) and dairy cattle for beef area (Hokkaido region), have not changed their use of beef, because school dieticians and local producers have cooperative relationship. 3)Dieticians at school lunch supply centers should be prepared to promptly deal with appropriate safety issues.
