Outline of Final Research Achievements

In this study, we constructed a new database by combining food expenditure data with nutritional information and made long-term estimates of nutrient intakes and nutrient prices by region and household attribute in Japan. These estimates were then used to shed empirical light on the effects of food prices on health through nutrient intakes. Our results show that (1) real prices of energy and lipid have fallen substantially in Japan since the 1970s, (2) there is a significant correlation between child obesity and specific nutrient prices, and (3) although nutrition gaps have been observed in Japan, where nutritional intakes vary systematically by socioeconomic class, the differences between the classes have been relatively small and shrinking over time.

Academic Significance and Societal Importance of the Research Achievements

本研究の革新性は、食品価格が食生活を通じて健康に及ぼす影響を分析するために、食品レベルではなく栄養素レベルの「栄養素価格指数」を新たに定義し、その推計法を確立した点にある。栄養素価格指数を用いることにより、食品の相対価格の変化が肥満や生活習慣病に与える効果をより厳密に分析することが可能となるだけではなく、世界各国の食品価格の変化を国際比較可能な価格指数として表現することが可能になる。高所得国の中でも例外的に肥満度の低い日本のデータを用いた実証分析は、21世紀のパンデミックとも呼ばれる肥満の決定要因に重要な示唆を与えるものであり、その社会的意義は大きい。
