本研究課題は、事業期間の延長が認められたが、これは2014年4月2日までという日程で開催された国際学会で本研究の成果を発表するための措置であり、研究自体は完了している。
すなわち2014年度の実績は、国際学会への参加のみである。
2014年3月30日～4月2日という4日間の日程で開催された「Food Structure and Functionality Forum Symposium -From Molecules to Functionality-」という国際会議であり、アムステルダム（オランダ）で開催された。
発表のタイトルは「The difference of ice crystal morphology in the frozen muscular tissue of horse mackerel : the effects of different handling on ice crystal coarsening」で、漁獲後、凍結までの時間が長くなると、同様の凍結を行ってもマアジの筋肉組織が大きなダメージを受けることを明らかにした。
また、同様の内容が国内の学術論文にアクセプトされ、6月に発行された。
