Outline of Final Research Achievements

This study clarifies the brewing process and nutritive value of alcoholic beverages that are the staple diet of Dirasha and Konso people in Ethiopia and Gurung, Chepang and Newar people in Nepal, and their eating habits.
The results show that they take in more nutrition than recommended daily intake by increasing nutritional value of grains through alcohol fermentation and consuming large quantities. And, It was possible to consume large quantities(1-5 kg) of these alcoholic beverages because of the use of lactic fermentation before alcoholic fermentation, which improved the safety and preservation characteristics of the beverages by preventing the propagation of various microorganisms, and controlling the alcohol level.

Academic Significance and Societal Importance of the Research Achievements

降水量が少なく不安定なため野菜や豆類の栽培が困難な環境に暮らす民族のなかには、穀物の酒を食事とすることで健康を維持しているものもいる。地酒がもつ文化的・社会的な役割に関しては数多くの研究報告がある。しかし、地酒を大量に摂取すると身体的・社会的問題が生じることから、地酒のもつ食品的価値や、どのように地酒を大量摂取する食文化が確立されるのかについては解明されてこなかった。酒を食事とする人びとを調査対象とし、その醸造方法や栄養価、利飲酒実態について明らかにすることは、これまでの地酒は風味を楽しむための嗜好品であるという固定概念を覆し、食品化学や食文化研究に新しい視座を提示することにつながる。
