Outline of Final Research Achievements

Using intellectual property rights data as indicators of exclusive innovation
outcomes, this study empirically examined these issues. The distinction of consumer communication channel-related designs from other industrial designs utilizing the advantage of the simple structure of foods has realized highly fitted proxies of distinctive innovation activities. Investigating the firm performance of 192 Japanese food manufactures between 2009 and 2013 revealed the dominance of incremental innovations in product packaging over other exclusive innovations. This study also examines the birth of the market for Japanese black tea, its decline, and its rebirth. We found the main reasons for the revival and spread of Japanese black tea were production and manufacturing innovation. Manufacturing technology for fermentation was established by entrepreneurial farmers and transferred to other Japanese black tea farmers, resulting in the rapid market creation of the Japanese black tea.

Academic Significance and Societal Importance of the Research Achievements

日本における成長産業として、そして地方創生の主役として今、食と農の分野が期待を集めている。日本は安全で高品質な食材を提供する基盤を有している一方、産業として捉えた場合には規模や付加価値の面で更なる上積みが期待できると考えられるためである。本研究では、食品の高付加価値化や収益化の仕組みについて、知財データや企業財務データを活用し、初めて食料品製造業全体を対象とした実証分析を行った。さらに高付加価値化と収益化の具体的事例として国産紅茶を取り上げ、市場創造・拡大に焦点を当てたケーススタディを行った。このことにより、経営上の課題や市場創造・拡大に対する成功要因を明らかにした。
