| Outline of Final Research Achievements |
We focused on the facts that "umami" ingredients continuously secreted saliva. We planed to establish the optimum concentration of "umami" ingredients for saliva secretion in older adults, develop mouth moisturizers containing "umami" ingredients, and verify the effects of the moisturizer on the improvement of xerostomia in older adults. However, the epidemic of COVID-19 infection prevented these studies. Therefore, we decided to set the optimum concentration of "umami" ingredients for normal young adults. We confirmed whether stimulation by the "umami" ingredients showed a similar tendency for salivation, as in the results of previous studies. No similar results could be disappointingly obtained. Thus we conclude that the optimum concentration of "umami" ingredients was not elucidated.

| Academic Significance and Societal Importance of the Research Achievements |
わが国は超高齢社会の進展により口腔乾燥患者が急増している。口腔乾燥に対しては対症療法として口腔保湿剤が使用されることが多く、有効とされている。口腔保湿剤には唾液分泌促進効果を狙ったフレーバーが付与されているものが散見され、そのうち酸味が多く、これは刺激が強すぎて苦痛となるばかりでなく、その効果も限定的であるといわれている。近年、酸味よりも「うま味」の方が持続的に唾液を分泌することが報告されており、口腔保湿剤に「うま味」が配合されていれば、口腔乾燥症に対するより有効な対処法になると発想した。本研究ではその有効性を示すことは困難であったが、今後の口腔乾燥症対策の一助となると考える。
