Outline of Final Research Achievements

Field surveys were conducted to search for candidate species for effective utilization of low and underutilized deep-sea fisheries resources. We clarified the distribution of Malakichthys griseus (Acropomatidae), Coelorinchus jordani (Macrouridae), Hoplostethus sp. (Trachichthyidae), as well as some of the ecological characteristics of Metapenaeopsis provocatoria longirostris (Penaeidae), Charybdis (Gonioneptunus) bimaculata (Portunidae), and Cubiceps whiteleggii (Nomeidae).
A questionnaire survey of eaters was conducted along with recipe development for low- and underutilized species, suggesting that repeated publicity is effective in raising awareness. Dietary education media were developed for introduction to food education in primary education settings. Questionnaire surveys indicated that good quality dietary education media are effective for food education.

Academic Significance and Societal Importance of the Research Achievements

深海性の魚介類については、食材開発はおろか、分類や生態に関する研究も遅れている。本研究では洋上のフィールド調査で未利用資源の探索を行い、数種の魚介類について、今後利用するにあたり必要な分布、繁殖、成長などの生態学知見を得ることができた。新しい食材として有望な種をいくつか見出すとともに、レシピの開発を行い、初等教育における効果の高い食育媒体を作成することができた。「魚離れ」が深刻な問題となっている今、小・中学校における食に関する教育が重要視されているが、未利用魚介類に着目した本研究の成果は、次世代の消費者への教育効果のみならず、次世代の生産者の収入アップと後継者の育成にもつながるものである。
