Outline of Final Research Achievements |
In the Republic of the Philippines, nutritional and health disparities due to poverty have become a problem. In particular, infants under the age of five are seriously weakened due to low nutrition, and feeding programs are being implemented at daycare centers to provide nutritional support. However, the supplemental foods provided consist mainly of carbohydrates and proteins, and the intake of micronutrients such as vitamins and minerals is insufficient. In this study, a dietary survey was conducted on children in the Philippines to identify dietary problems, and menus using moringa oleifera as a source of deficient nutrients were designed and nutritional supplements were prepared. In addition, nutrition education materials were created.

Academic Significance and Societal Importance of the Research Achievements |
本研究では、フィリピンの幼児の食事調査及びfeeding program の実施調査から、その問題点を抽出しfeeding program の指標となる、栄養・食事管理、衛生管理、生産管理等の方法をまとめた。また、不足栄養素を供給するためのサイクルメニューの立案や栄養補助食品を作成した。さらに、これらの内容を含めた栄養教育媒体を作成した。 現在、貧困地域の食料支援は、物資の現物配給が主流であるが、今回の研究は、feeding program を通して、生涯、健康な食生活を送るための「知識」と「技術」の習得を目的としており、長期的には最も効果を示す、栄養・食料支援の方法であると考える。
