Outline of Final Research Achievements

In this study, we conducted a survey among young women to clarify the relationship between umami sensitivity and skeletal muscle mass loss. Results showed that more than 40% of patients had low skeletal muscle mass, but no association was observed with umami sensitivity. On the other hand, body fat percentage was suggested to be associated with umami sensitivity. Inosinic acid, which is representative inducer of Umami sensation, strongly induced myoblast differentiation in C2C12, murine myoblast cells. In the future, we will examine the relationship of umami sensitivity with both skeletal muscle and body fat in the elderly.

Academic Significance and Societal Importance of the Research Achievements

低栄養の要因である味覚感受性障害を骨格筋量減少との直接の関連から検討する研究は他にない。ヒトの現象でうま味感受性が骨格筋の代謝に影響することが明らかになれば、新たなフレイル予防の試みに繋がる可能性がある。本研究では、若年層における骨格筋減少という新たな問題を明らかにしたが、うま味感受性との関連は確認できなかった。うま味感受性の体組成への影響は各年代の健康課題に資することから引き続き調査を行う。
