Outline of Final Research Achievements

In this research, we have developed taste preference matching system with a green tea taste DB, and conducted a demonstration experiment. In the green tea taste DB, we were able to construct a total of 70 green tea taste DB. In the development of the taste-preference matching system, we built three algorithms and succeeded in creating an application using Python.
Furthermore, the demonstration experiment was conducted multiple times, and the application was improved and the demonstration experiment was improved each time, and a taste preference matching system capable of deriving the favorite green tea for the subject was realized.

Academic Significance and Societal Importance of the Research Achievements

本研究にて構築した味嗜好性マッチングシステムを用いることにより、被験者の好みを選択する際に基準としている味質・味数値を数値化・視覚化することが実現し、さらにはそのデータを基に未知・未食の食品の中から被験者にとっての好みの食品を検索することが実現した。これによって、これまで主観的評価であった「おいしさ】の視覚化・数値化の実現に近づいたこととなる。さらには人の感性評価ツールとしての可能性も示され、食品の評価ツールまたは新たなマーケティングツールになる可能性を示すことができた。
