Outline of Final Research Achievements |
Polyphenols, which are known to have antioxidative activities, react with proteins under oxidative conditions, resulting in generation of various modified proteins. We aimed to discover biological effects of the polyphenol-modified proteins with a special focus on natural immunity. Phage-displayed single-chain variable fragment (scFv) and peptide libraries were constructed and selected against the polyphenol-modified proteins as the interaction partners. We found that peptides/proteins with arginine-rich motifs generally interact with the modified proteins. Thus, the results suggest that the polyphenol-modified proteins might have roles to regulate functions and/or activities of proteins with the arginine rich motifs.

Academic Significance and Societal Importance of the Research Achievements |
抗酸化作用をもつポリフェノール類は、一般的に健康に良い作用があると信じられているが、生体内での真の作用機序については未解明な点が多く残されている。本研究は、ポリフェノールによって化学修飾されたタンパク質に着目することで、食による生体機能調節の新たな分子メカニズムを探究した。ポリフェノールによる免疫賦活その他の生体防御メカニズムの解明は、人々の健康な生活に貢献すると期待される。
