Outline of Annual Research Achievements |
The main achievements of this project are shown in the following two aspects after the study carried out over a six-month period. 1.two different frying oils samples has been prepared under 180, 200, and 220℃ frying temperatures will be used for the future e-nose analysis and toxic side effects investigation. 2.We successfully prepared polar compounds using a chromatographic glass column from the prepared fried oil samples.

Strategy for Future Research Activity |
According to the project plan, our future work will mainly focus on separating/isolating and purifying the polar compounds and then subject it to human hepatocellular carcinoma HepG2 cells for the determination of the cytotoxicity of different polar compounds such as ox-TG, TGD, TGO etc. in vitro. Meanwhile, we will also work on the investigation of the changes in the odor of oil samples that fried under different temperatures and times using e-nose system.
