Outline of Annual Research Achievements |
Total polar compounds (TPC) that formed during processing and storage of fats and oils may have toxic side effects. In order to evaluate the adverse effects of the fried oils especially for the formed chemicals including oxidized fatty acids, the following research achievements have been made. 1.The TPC have been successfully isolated from the fried oils and the effects of the temperature, frying time on the volatile flavor components of fried oil have been evaluated. 2.The major triacylglycerol hydroperoxides (TGOOH) species in the prepared oil have been identified in the fried oils by LC/MS. 3.The individual TGOOH and fatty acid hydroperoxides have been successfully synthesized.

H30年度は、細胞実験や過酸化脂質の分析に必要な中性脂肪過酸化物等を化学合成により作製した。入手困難な過酸化脂質の化学合成法がすでに当ラボの先行研究で確立されたため、本研究に必要なtriacylglycerol hydroperoxides (TGOOH)やfatty acid hydroperoxides などの標準物質を容易に化学合成により得られ、当初の計画どおり順調に進展している。

Strategy for Future Research Activity |
The cytotoxic effects of the isolated TPC, synthesized TAG and the oxidized fatty acid on the HepG2 cells will be investigated through experiments including cell viability, migration and invasion assays, DNA fragmentation, flow cytometry analysis and western blotting.
